What food(s) to pair with a mature Hermitage and Musigny?

<P>There are  some bottles in my cellar that I need to drink down this year.  They include a 1997 Vogue Musigny Vielle Vignes and a Jaboulet Hermitage La Chapelle from the same vintage.  I've been reading tasting reports about these wines and they appear to be ready to go now.

Does anyone have any suggestions as to what foods would pair best with these wines?  I generally like to pair mature selections with something simple, so as to not upstage the wine.</P>

When in Rome..... We all know the age old words. In this case it's true. Do as the French do at this time of year, Cassoulet Something simpler to prepare would be a potato au gratin with Prosciutto bits. This can be found in 'Bistro Cooking' by Patricia Wells
