The wine is a blend of 100% cabernet sauvignon from the Taplin Vineyard in St. Helena and the Morisoli Vineyard in Rutherford. This age worthy vintage marries complex structure with bright expressions of ripe fruit and judiciously applied oak. It can be enjoyed now or for the next ten to twelve years. 2005 Textbook (Pey-Marin) - Cabernet Sauvignon Mise en Place
Decanted for 1 hour before tasting. First taste was tight and highly structured. As the meal went on the wine became more seamless and smooth. 3 to 5 years more years in the bottle will be no problem! This really is a "textbook" Napa cab.

Adastra Vineyard, a California Certified Organic vineyard. A balanced, prototypical California pinot noir. Bold on the palate but not heavy. Mineral, cherry, and smoke flavors.
