A still white wine from Pinot Noir grapes? Why not, it's done for sparkling wines all the time! The wine's color isn't quite white - it has a pale orange-pink hue reminiscent of peach juice. The nose is gorgeous, with wafts of orange blossom, honeysuckle, lime, and peach. On the palate, peach nectar, honey, and a beautiful minerality makes it similar to Roussanne, but fruitier. Absolutely delicious - would be perfect with sushi or fish with an Asian preparation.
