Tuesday, May 24, 2011 - Our first bottle from Calera. Nose was subdued to begin but later opened up to reveal white peach, pineapple, other tropical fruit. The first sip was a hypothetical blend of pear, rice pudding, and green apple. A deep rich body which ended with a touch of mineral or stone (?) A very smooth and creamy texture. We had this with crab stuffed haddock and ancho/paprika zucchini.

A flawed bottle may be affected by cork taint, heat (maderized), oxidation, or excessive sulfur. Additionally, some people consider wines tainted by Brettanomyces (Brett), a non-spore forming genus of yeast, a flaw although there is much controversy surrounding the subject.
