White Chardonnay - Grand Cru
Producer Notes

The Fevre family has been an integral part of the Chablis landscape for upwards of 250 years. Since the beginning, though, they have been adamant about protecting and promoting the typicity of Chablis, whose whites draw a unique and well-defined line in the sand when it comes to mineral-laden French Chardonnay. lovely light colour; classic notes of minerality and acidity on the nose; still a bit unbalanced on the palate, with the minerality still dominant; needs a few more years to reach its peak

Fairly standard, maybe needed some time, which it was not given, to open a little more. Steely, minerally chablis style, but maybe a bit too lean.

From magnum. Opened after the 2004 Jadot CC, and the contrast was almost comical. Very pale green-inflected color; a laser beam of intense marine aroma; "meet the Flintstones" flavors - great with Hog Island oysters and virtually overpowering with charcuterie. Came around with more roundness and breadth about two hours later, but still needs time.

A flawed bottle may be affected by cork taint, heat (maderized), oxidation, or excessive sulfur. Additionally, some people consider wines tainted by Brettanomyces (Brett), a non-spore forming genus of yeast, a flaw although there is much controversy surrounding the subject.
