Producer Notes

Scientific methodology prevails at quirky Australian winery Mollydooker, a 1995 creation of husband and wife Sparky and Sarah Marquis. This was a stunning shiraz. Lots of fruit, and great tannic structure to go with it. Red fruits predominated, with cedar and some smoke. Evolved in the glass for an hour. Was closed for about 10 minutes, then opened and developed beautifully over that time. Could last for another 5 years in the bottle, but hard to imagine it getting better.

Purple in color with hardly any trace of bouquet. This wine is not the fruit bomb it was two years ago. Vanilla, spice mixed with blackberry on the palate. Medium to short finish. Needs two hours of air to for the fruit to show beyond the wood. I am hopeful that this will evolve.

A flawed bottle may be affected by cork taint, heat (maderized), oxidation, or excessive sulfur. Additionally, some people consider wines tainted by Brettanomyces (Brett), a non-spore forming genus of yeast, a flaw although there is much controversy surrounding the subject.
