Issue 91

Tasted over a period of 16 hours, the nose displays deeply concentrated black cherry, olive, violet, cassis and nectarine aromas, develops more chocolate with air. On the palate, the richly textured flavors are integrated yet restrained. 6 hours of air soften the tannins a bit but the structure is destined for aging.

Color was a dark brick red. Togni bottles his wines unfiltered, and it shows. Pop and pour: There's a nice color complexity that you don't see from filtered wines. The wine smelled like olive, menthol and even a little floral. Palette has cherry, oak, a thick and coating wine. Long solid finish. After one hour decant the wine was much bigger up front, both on the nose and palette. There was a lot more finesse in the wine as it delivered up front, in the middle, and on the finish. Much improved.

A flawed bottle may be affected by cork taint, heat (maderized), oxidation, or excessive sulfur. Additionally, some people consider wines tainted by Brettanomyces (Brett), a non-spore forming genus of yeast, a flaw although there is much controversy surrounding the subject.
