Red Cabernet Sauvignon
Producer Notes

The mission statement reads, in part, "To produce organically grown fruit and with this fruit make a singular wine of the highest caliber and distinction." By all accounts, Bart and Daphne Araujo are succeeding magnificently. The flagship wine, the Cabernet Sauvignon from their own Eisele Vineyards, is hailed by critics and desired by consumers in every vintage. Though first planted to Zinfandel... More »

Very smooth, nice finish and tannins are almost non-existent, but lacked the nuances a perfect wine would display.

OK wine, but not aging well. Kinda like a third growth with nice nose but not enough weight and finish.

Spectacular long finish, black raspberry and chocolate on the palate with a deep smokiness. not tannic at all.

The most profound and singular wine I've had to date. I don't think I could mistake this for any other California Cabernet. Dark red brick color. The nose had complex aromas of a more mature wine, but the mouthfeel was youthful and vibrant. Extremely intense and mouthcoating flavors of spicy oak and licorice. Long finish

Deeply colored with thick, slow moving, and lightly pigmented legs. Powerful but deft scents of milk chocolate, game, white flowers, cherry flamb?, and minerals. Great acidity with very smooth and velvety tannin. Incredible length ? the wine starts to disappear only to suddenly regenerate with loads of flavor but no weight. So good that I believe the wine is worth its (yet again) increased tariff. Interestingly Araujo is not only farming organically but has begun Bordeaux Varietals 1 to experiment with biodynamic techniques as well. Fruit is de-stemmed and undergoes a pre-fermentation maceration. The juice is fermented Pinot Noir 10 using indigineous yeast and aged for 25 months in 100% new French oak prior to bottling.

A flawed bottle may be affected by cork taint, heat (maderized), oxidation, or excessive sulfur. Additionally, some people consider wines tainted by Brettanomyces (Brett), a non-spore forming genus of yeast, a flaw although there is much controversy surrounding the subject.
