Red Cabernet Sauvignon
Producer Notes

When Paul Hobbs founded his eponymous winery in 1991, he set out to produce small lot, hand-crafted, vineyard designate wines. He began with just three - one Chardonnay, one Pinot Noir and one Cabernet Sauvignon.

Over the years, the small family of wines has grown to over a dozen as numerous new and historic vineyards have captured Hobbs' attention since that first vintage. The... More »

Drink Dates 2008-2014

This wine started a bit jumbled, with spiky alcohol, meddled fruit and a tight and tannic finish. After about an hour and a half the wine opened nicely and revealed great balance, depth and concentration. Nose: Blackberry, cherry, plum, a tad of pencil lead, and finally some sweet oak highlight the aromas. A spicy cedar and clove note accents the finish. Palate: A bit jumbled at first, the wine came together well after an hour and a half open. Blackberry, cherry, spicy plum, full and expansive flavors fan out over the palate, seducing the taster to come back for more. The tannins are fine from aging, but are resilient and firm on the finish, framing this great wine's palate experience. Drink over the next 3 years.

Spectacular. Jammy, dark berry fruit, medium to full bodied, nice smooth tannin. Need more of this...

Dark purple in color. Tobacco and cedar on the nose. The wine is a delicious blend of blackberry fruit and mocha flavors on the palate. I have had this wine for over the past five years and believe that it has reached it's peak and will continue to drink well for another 5+ year.

A flawed bottle may be affected by cork taint, heat (maderized), oxidation, or excessive sulfur. Additionally, some people consider wines tainted by Brettanomyces (Brett), a non-spore forming genus of yeast, a flaw although there is much controversy surrounding the subject.
